The 46th School of Tea held in Thailand on 30th November 2016, was the first of its kind in Asia! Years of rich, immersive knowledge in the finest tea was shared with hoteliers, chefs and mixologists around the world. The resource leaders for Asian's first programme was Dilhan C. Fernando - Director of the School of Tea and son of Dilmah founder Merrill J. Fernando, Edwin Soon- Sensory Analyst and Wine Author, and Robert Schinkel- award winning mixologist.
Starting off, Dilhan C. Fernando reveals Dilmah's secret to quality- its artisanal manufacturing process, where every tea leaf is carefully handpicked. This will be followed by a guided tasting of 4 teas and 1 infusion. Next, the participants get a taste of the best tea growing regions in Sri Lanka, with the exclusive Watta range. Watte Single Estate Teas offer a rare taste of the uniqueness of handpicked teas from the finest estates in Sri Lanka. These teas take the journey that began with Watte Single Region Tea, to a higher plane. Afterwards participants learned to brew the perfect cup of tea- water temperature, water quality and quantity, tea leaf quantity, stirring, and brewing time is the difference between an average cup of tea and a perfect one.
Commencing the programme, Edwin Soon presented Sensory Evaluation with a live demo. His topic was how light tea works elegantly with light foods like salads, steamed fish, while strong tea pairs richly with grilled meats, rich chocolates and desserts. The last School of Tea lesson was Robert Schinkel's Mixology session where participants were split up into groups for the tea inspired mixology challenge, which included the highly interactive crowd favourite 'Train the Trainer' segment.
Donald Lawson, Cluster Culinary Manager at Rasa Hospitality Management and Consulting, said that the School of Tea was "an outstanding event and a great valued way to expand the knowledge of tea to a higher level." He went on to say that, "It was my second School of Tea but I can say that I learned a little extra on that day. Moving forward I am working on introducing the Dilmah range to all our current properties."
